SALAD WITH LENTILS, BLACK QUINOA AND TUNA
INGREDIENTS
• 1 cup Boiled lentils
• 1 cup Boiled black quinoa
• 1 can of tuna in water
• 1 cucumber in cubes
• 1 roasted red pepper, in cubes
• 1 tbsp. mayonnaise
• olives chopped
• some parsley
• Salt, Pepper
DIRECTIONS
I rinse out the lentils and boil them. I drain and let cool. I rinse the quinoa and drain it in a strainer and boil for 20 minutes at a ratio of 1 part quinoa to 2 parts water. I strain it. After it has cooled down, mix all the ingredients in a large bowl and season with salt and pepper.
The salad is served cold.

• 1/2 cup of Black Quinoa
• 1 green pepper
• 1 red pepper
• 1 tomato in cubes
• a large piece of feta cheese
• half dry onion
• few cashews or peanuts coarsely chopped
• Salt, Pepper
1 egg for spreading
DIRECTIONS
1) I rinse out the quinoa well, drain it and boil it for 20 minutes at a ratio of 1 part quinoa to 2 parts water. When it drinks all liquids is ready.
2) In a small frying pan, in a little oil, sauté the onion, the peppers and in a while put the tomato in.
3) Mix the above with quinoa, add the nuts and the feta cheese that I have crushed with my hands.
4) With this mixture, I fill my pasties, egg them and bake them in bars at 180-200 degrees, up and down until they are golden.

• 1 cup White quinoa
• Salt, Pepper
• a little butter or margarine
DIRECTIONS
1) I rinse the liver well. If i want, I boil it for a few minutes and throw the water. Season with salt and pepper and put it in a preheated oven with some oil and a little water. I bake up it in bars and down at 200 degrees for as long as necessary, depending on the size. I check it with a toothpick to see when it's ready.
2) I put in the pot 2 cups of water. I rinse the quinoa well in a strainer and when the water is boiled I throw it in the pot. Boil it for about 20 minutes. When it drinks all liquids and pulls a small white stub from her inside, I pull off the eye. As it is still hot i pour over a little butter or margarine, salt and pepper and my garnish is ready

• 1 red pepper
• 1 green pepper
• 1 dry onion
• Salt Pepper

DIRECTIONS

BASE INGREDIENTS: • 125 gr. Digestive biscuits
• 125 gr margarine
• 125 gr of red quinoa boiled
CREAM: 400 gr cream cheese
• 50 gr of caster sugar
• 200 g of cream (35% fat)
TOPPING:
• Sour cherry spoon sweet
DIRECTIONS
I crumble the biscuits well and mix them with the boiled quinoa and the margarine that I have already melted. This is the base for my sweet.
Mix in a mixer the cheese with the sugar for a while and then add the cream continuing the beating.
In individual bowls, I press the base mix into the bottom of the bowls and spoon onto the cream I made. Leave in the fridge for 1 hour and after cooling and stabilizing, cover with the sour cherry spoon sweet.

• 1 cooking chocolate (125 gr)
• half a margarine (125 gr)
• Liqueur of my liking

DIRECTIONS
I melt the cooking chocolate into a bain marie. I also put into the margarine to melt together. I crush the cookies in multi. In a bowl, stir well boiled quinoa, crushed biscuits and chocolate with the margarine. I leave it for a while in the refrigerator to tighten the mixture. Then I roll into balls, dip in the liqueur and roll in the truffle.

The known bean soup becomes even more flavourful and nutritious if I add a little quinoa. Also the soup will be very nice thickened.

• 2 carrots
• 2 peppers (green - red)
• 1 dry onion
• tomato juice
• olive oil
• Salt, Pepper.
DIRECTIONS
From the previous night I have soaked the beans. In the morning I boil 1kg of Water and put the beans in my pot. After getting a boil, I throw the water away and repeat the process. Add carrots, peppers and onion, all finely chopped. In a little while add tomato juice, oil, salt and pepper. In a strainer I rinse my quinoa well. 20 minutes before I turn off the fire, I drop the quinoa into the pot to boil.

• 250 g minced meat
• 1 dry onion
• 2 tomatoes ground
• Salt, Pepper
• cinnamon
• basil
• 1 pack of pasta
• Kefalotyri or whatever kind of cheese I want.
DIRECTIONS
1) I boil my spaghetti as usual and I butter.
2) In a deep frying pan, roast the mince until it darkens slightly. Continue adding the onion and then the ground tomatoes. Season with salt and pepper, add just a bit of cinnamon, basil or whatever other herb I want. Add boiled water and let my mince to be cooked.
3) In a thin strainer I rinse well my quinoa well and 20 minutes before the end I throw it in the pan with the mince to cook together (if necessary add hot water). After 20 'and having absorbed the liquids, my sauce is ready.
4) I serve the pasta with lots of mince, quinoa and cheese of my choice!

• 200 ml of cream (35% fat)
• 1 cooking chocolate (125 g)
• a shot of cognac
• few walnuts finely chopped (optional).
DIRECTIONS
1) I rinse well my quinoa well in a strainer. I boil it at a ratio of 1 part quinoa to 2 parts water.
2) In a bain marie I warm the cream and I add in the chocolate to melt.
3) In a bowl I crumble the cookies, wet them with cognac, add in the finely chopped nuts and add 100 gr from my boiled quinoa. I add the cream with the chocolate and stir well.
4) Leave the mixture for a while in the refrigerator and, after firming, roll in the shape of a tree trunk. I place it in the fridge to stabilize and cut into slices.
